NUU is a house of fermentation where Japanese heritage meets the soul of Belgian terroir. Working exclusively with local ingredients, we craft Shoyu, Miso, and Amazake by hand, guided by Koji, artistry, and time.

ORGANIC INGREDIENTS

Just a few things — beans, grain, salt, water. We keep them few, and choose them well: organic crops grown in European soil, close to home.

Every batch is shaped by hand. When a ferment is ready, when to wait — these are things only an artisan's eye can tell, learned over many years.

JAPANESE HERITAGE

Our methods carry a thousand years of Japanese fermentation, brought west and kept honest — the long, patient way, never the shortcut.

BELGIAN TERROIR

Then the place takes over: Belgian air, ground, and the European oak of our barrels, all folded slowly into the taste.
