For our sweet red miso,
we follow the traditional Japanese recipe
for Edo (江戸, the old name for Tokyo)
ama miso (甘味噌, sweet miso).

A rice-based red miso,
made with chickpeas
in place of soy.

It carries about one and a half times
the rice koji of a classic miso —
and that is where its sweetness comes from.

The flavour is harmonious and full —
sweet, lightly salted at 6 %,
balanced and quietly intense.

Its low salt makes it generous in the kitchen.
It takes to almost anything.

Thanks to its low salt, ama miso adapts to almost any technique: marinades, spreads, grilled fish, meats, and vegetables. It brings a sophisticated note to sauces, broths, and even desserts.

Ama miso pairs beautifully with spices — which is why we offer two ready-to-use blends we think are delicious.

Always use clean utensils — a clean spoon, a clean rim — each time you serve.
After opening, keep refrigerated.

Yes. A little liquid — similar to tamari — can appear in the jar over time. It is perfectly fine. Simply stir it back through before using.

Not at all. This is simply down to how we make it — our miso is not retort-sterilised, so you won't hear the pop you might expect from some jarred foods. It is completely normal.

However you like. In Japan, miso is enjoyed many ways: fresh and unheated for its lively flavour, or deliberately caught a little on the heat, where it caramelises into something deeper. There is no single right way — let your cooking decide.
